Day #6 - Healthy Frozen Peppermint Bark


As always peppermints, and candy canes are an iconic food for the holiday seasons.  One of my personal favorites is peppermint bark, although that isn't always the healthiest option.  Today I'm going to share a delicious healthier version of frozen peppermint bark.  One of the amazing things about this dish is its flexibility to personal preferences.  If  you'd like to add anything in or take something out feel free.  Some recommendations would be strawberries, or other favorite fruits, as well as substituting for you favorite yogurt.  When I made this recipe for the first time I wanted to see how mint extract would taste, but it made the recipe very bitter and didn't go well with the vanilla yogurt, so I would recommend to stay away from that.  Other than that I highly encourage everyone to try this delicious dessert.

Ingredients:
  • 1-2 cups of Greek vanilla yogurt
  • 2 crushed candy canes
  • raspberries
  • chocolate chip
Directions:
1. Begin by taking your candy canes and crushing them, you can do this by placing them in a plastic bag and hitting them or placing them in a dish.


2.Once crushed mix the candy canes in with your yogurt.
3. Take a glass dish and lay wax paper over top.  Then put you yogurt with mints, in a smooth out so its in a thin layer.
4.From here you can let you imagination go a little bit, but I just placed some raspberries and chocolate chips into the yogurt.

5. Take your dish once ready and place into the freezer for about 5 hours or until frozen.
6. Take out when frozen and break the pieces so they look like peppermint bark.  Serve and enjoy!!
