Pumpkin French Toast

Do you ever feel like having something different for breakfast compared to the normal pancakes, cereal, and french toast.  Or you have some leftover pumpkin from a recipe you made earlier that week.  Well I have the perfect thing for you, pumpkin french toast.  This is a perfect way to enjoy a change from you normal breakfast and is super delicious.

Overall this recipe is also very healthy coming in at only 89 calories per slice.  I really liked this and it tasted very good. So lets get started.

Ingredients:
  • 1 egg + 1 egg white
  • 1/4 cup pumpkin 
  • 1/4 cup almond milk (unsweetened vanilla recommended)
  • 1 tbsp sugar
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 4 slices of bread (I used whole wheat 35 calorie bread) 
Directions:
1) Mix together the ingredients minus the bread in a flat dish
2) Once mixed dip the toast front and back in the batter, wipe off any drippings then place on a heated buttered pan.
3) Cook each side until done. Put on a plate and serve with your favorite toppings if you'd like or eat it plain.
