Day #12- Homemade Carmel Popcorn

There is nothing better than watching movies, and spending time with your families during the holidays.  Snuggling up on the couch with a soft blanket and watching your favorite Christmas movie, and of course nothings better than having a side of popcorn.  No matter what this is a great snack for a movie night, and I'm here to share a recipe for Carmel popcorn.  This delicious food can be eaten can be eaten right or as a snack over the next couple days if stored in an air tight container.  This delicious treat is super filling and is definitely a healthier alternative to microwave popcorn, or store bought Carmel corn.  So lets get into it and hope you enjoy!

Ingredients:
  • 4 tbsp Coconut Oil
  • 1/2 cup popcorn kernels
  • 1/4 cup honey 
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • Salt(optional)
Directions:
1) Start by making your popcorn; heat up 2 tbsp of coconut oil in a pan, then put in 1/2 cup popcorn kernels into the pan.  Cover and wait till the kernels begin to pop, once this happens make sure you're constantly shaking the pan so the kernels don't burn.
2)  Once popcorn is done place into a bowl for later.
3) Pre-heat you oven to  300 degrees Fahrenheit.
4) Over your stove-top melt 2 tbsp of coconut oil, with 1/4 cup of honey, and 1 cup of brown sugar. (stir constantly to make sure the mixture doesn't burn)
5) Once the Carmel mixture is melted together turn off heat and stir in the vanilla and baking soda.

6) From their take you popcorn and spread it out onto a baking sheet and spoon the Carmel mixture over top. (it's okay if its not all covered at first)
7) Put you pan into the heated oven for 30min and stir up the popcorn every 10min.
8) Once done put into a bowl to eat or store in a container and enjoy!
